Instructions

3. In a separate bowl, beat together the butter and brown sugar until light and fluffy. Add the pumpkin puree, egg and vanilla extract and beat until well combined.
4. Slowly add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chocolate chips.
5. Using a cookie scoop or tablespoon, scoop out the dough and roll into balls. Place the balls on the prepared baking sheets, about 2 inches apart.
6. Bake for 10-12 minutes, until the edges are golden. Allow to cool for 5 minutes before transferring to a wire rack to cool completely.
