Ingredients

2 ¼ teaspoons active dry yeast

4 ½ cups all-purpose flour

For the filling:

1/4 cup cocoa powder

1/4 cup sugar

2 teaspoons ground cinnamon

1/4 cup butter, melted


For the topping:

1/4 cup sugar

1/4 cup cocoa powder

2 tablespoons melted butter

1 tablespoon ground cinnamon

Instructions

1. In a large bowl, combine the yeast, warm water, and sugar. Stir until the yeast is dissolved. Add the melted butter, warm milk, and eggs. Stir until combined.


2. In a separate bowl, sift together the flour and salt. Slowly add the flour mixture to the wet ingredients and stir until a soft dough forms. Knead the dough for about 10 minutes, until it is smooth and elastic. Place the dough in a lightly greased bowl, cover, and let rise in a warm place for about 1 hour.


3. In a small bowl, combine the cocoa powder, sugar, and cinnamon for the filling. Mix until combined.


4. Once the dough has doubled in size, punch it down and turn it out onto a lightly floured surface. Roll the dough out into a large rectangle, about 18 inches by 12 inches. Brush the melted butter onto the dough and sprinkle the cocoa powder mixture evenly over the top. Roll the dough up tightly into a log and cut it in half.


5. Grease a 9x13 inch baking dish. Place the two dough logs side by side in the baking dish. Cover and let rise for 30 minutes.


6. Preheat the oven to 350°F. In a small bowl, combine the sugar, cocoa powder, melted butter, and cinnamon for the topping. Sprinkle the topping over the top of the babka. Bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
