Ingredients

For the crust:

- 2 ½ cups chocolate cookie crumbs

- 6 tablespoons melted butter

- ¼ teaspoon salt


For the filling:

- 3 (8-ounce) packages cream cheese, softened

- 1 cup granulated sugar

- 3 large eggs

- 2 teaspoons vanilla extract

- 1 teaspoon espresso powder

- 2/3 cup semi-sweet chocolate chips

- 1/3 cup heavy cream

- 2 tablespoons cocoa powder

Instructions

1. Preheat oven to 350°F. Grease a 9-inch springform pan with cooking spray.

2. In a medium bowl, mix together cookie crumbs, melted butter, and salt. Press the mixture into the bottom of the pan and up the sides about 1-inch. Bake for 8 minutes. Remove from oven and let cool.

3. In a large bowl, beat cream cheese and sugar together until light and fluffy. Add eggs one at a time, beating after each addition. Add vanilla extract and espresso powder and mix until combined.

4. In a small saucepan, melt chocolate chips and heavy cream together over low heat, stirring constantly. Once melted, add the cocoa powder and stir until combined. Let cool slightly.

5. Pour the cream cheese mixture over the crust. Drizzle the chocolate mixture over the top. Bake for 40 minutes or until the center is almost set. Let cool completely before refrigerating for at least 2 hours. Enjoy!

This cheesecake can be stored in the refrigerator for up to 3 days.
