Description

Chocolate covered nut clusters are a delicious treat that can be made in minutes. They are the perfect snack or dessert to satisfy your sweet tooth. The combination of the crunchy nuts and creamy chocolate is simply divine. Chocolate covered nut clusters are also incredibly easy to make and require no baking or cooking. With just a few ingredients, you can whip up a batch of these tasty treats in no time!

This recipe calls for a handful of simple ingredients including nuts, chocolate, and a few seasonings. The type of nuts you use is completely up to you. Almonds, cashews, macadamias, and peanuts all work great. You can also use a combination of nuts for a more complex flavor. For the chocolate, you can use either milk, dark, or white chocolate. For a little bit of extra flavor, feel free to add in a pinch of salt, cinnamon, or even cayenne pepper.

Ingredients

  • 1 cup of nuts (almonds, cashews, macadamias, or peanuts)
  • 1/2 cup of chocolate chips (milk, dark, or white)
  • 1 tablespoon of coconut oil
  • Optional seasonings (salt, cinnamon, cayenne pepper)

Equipment

  • Baking sheet
  • Parchment paper
  • Double boiler or microwave-safe bowl
  • Spoon

Instructions

1. Preheat your oven to 375°F. Line a baking sheet with parchment paper and spread the nuts on top. Bake the nuts in the oven for 8-10 minutes, or until lightly golden. Allow to cool completely before continuing.

2. In a double boiler, or a microwave-safe bowl, melt the chocolate chips and coconut oil together. Stir until completely combined. You can also add in any desired seasonings at this point.

3. Pour the melted chocolate over the cooled nuts, and stir to combine. Make sure all of the nuts are evenly coated in the chocolate.

4. Using a spoon, scoop out spoonfuls of the mixture onto the parchment paper. Gently press down on each spoonful to form clusters. Allow to cool completely before serving.

Notes

If your chocolate starts to harden while you are forming the clusters, simply put it back in the double boiler or microwave for a few seconds to remelt it. You can also add a splash of cream to the melted chocolate to thin it out if needed.
