Ingredients

1/2 cup (125ml) vegetable oil

1/2 cup (100g) white sugar

1/3 cup (55g) brown sugar

2 eggs

1 teaspoon (5ml) vanilla extract

1 cup (125g) all-purpose flour

1/2 cup (50g) cocoa powder

1 teaspoon (5ml) baking powder

1/2 teaspoon (2.5ml) baking soda

1/4 teaspoon (1.25ml) salt

1/2 cup (125ml) milk

1 cup (150g) chopped dates

Instructions

1. Preheat oven to 375°F (190°C). Grease or line 12 muffin cups with paper liners.


2. In a large bowl, whisk together the oil, white sugar, and brown sugar. Add the eggs and vanilla extract and whisk until well combined.


3. In a separate bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt. Add the dry ingredients to the wet ingredients and mix until just combined. Do not over mix. Add the milk and mix until just combined. Fold in the chopped dates.


4. Spoon the batter into the prepared muffin cups. Bake for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean. Allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

-You can use any type of oil for this recipe. I recommend using vegetable oil for a neutral flavour. If you don’t have vegetable oil, you can use melted butter, coconut oil, or olive oil.


-You can use any type of milk for this recipe. I recommend using whole milk for a richer flavour. If you don’t have whole milk, you can use skim milk, almond milk, or coconut milk.
