Ingredients

For the cookies:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup (1 stick) unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 cup blanched almonds, coarsely chopped

For the chocolate coating:
  • 1 cup semi-sweet chocolate chips
  • 2 tablespoons coconut oil or vegetable shortening

Instructions

1. Preheat your oven to 350°F. Grease a large baking sheet with butter or cooking spray and set aside.

2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.

3. In a large bowl, cream the butter and sugar together until light and fluffy. Beat in the eggs and vanilla extract until combined.

4. Slowly add the dry ingredients to the wet ingredients and mix until just incorporated. Fold in the almonds.

5. Roll the dough into 1-inch balls and place them on the prepared baking sheet. Flatten them slightly with the palm of your hand.

6. Bake for 8-10 minutes, or until the cookies are lightly golden brown. Allow them to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

7. To make the chocolate coating, melt the chocolate chips and coconut oil or vegetable shortening in a double boiler or in the microwave. Dip each cookie halfway into the melted chocolate and place them back on the wire rack to set.
