Ingredients

Instructions

1. Preheat the oven to 350°F (175°C). Line a 12 cup muffin tin with cupcake liners and set aside.

2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt and cocoa powder. Set aside.

3. In a large bowl, cream together the sugar and oil until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in the vanilla extract.

4. Add the dry ingredients to the wet ingredients in three batches, alternating with the buttermilk. Beat until just combined. Do not overmix.

5. Divide the batter evenly among the cupcake liners. Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool completely before frosting.

6. To make the frosting, beat the butter in a medium bowl until light and fluffy. Add the confectioners’ sugar, cream, and food coloring and beat for an additional 2 minutes, until light and fluffy.

7. Spread the frosting on top of the cooled cupcakes. Enjoy!
