Instructions

1. In a large bowl, combine the flour, sugar and salt. Cut in the butter with a pastry blender or a fork until the mixture resembles coarse crumbs. Add the water a little at a time, stirring with a fork until the dough comes together.

2. Turn the dough out onto a lightly floured surface and knead a few times until it comes together. Wrap in plastic wrap and refrigerate for 30 minutes.

3. Meanwhile, make the chocolate filling. In a small saucepan, combine the chocolate chips, cream, butter, vanilla, and cinnamon. Heat over low heat, stirring constantly, until the chocolate has melted and the mixture is smooth. Remove from heat and let cool.

4. Preheat oven to 375°F (190°C).

5. On a lightly floured surface, roll the dough out into a rectangle about 12 inches by 16 inches (30 cm by 40 cm). Spread the chocolate filling evenly over the dough, leaving a 1/2 inch (1 cm) border. Starting with one of the long sides, roll the dough up like a jelly roll. Cut the dough into 12 equal pieces.

6. Place the croissants on a parchment-lined baking sheet. Bake for 20-25 minutes, until golden brown. Let cool before serving.
