Ingredients

For the crust:

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) cold butter, cut into small pieces
  • 2-3 tablespoons ice water

For the filling:

  • 1 15-ounce can pumpkin puree
  • 3/4 cup packed light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 2 large eggs, lightly beaten
  • 1/2 cup heavy cream
  • 1/2 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips

Instructions

Preheat the oven to 375 degrees F. Grease a 9-inch pie plate and set aside.

To make the crust, mix together the flour and salt in a large bowl. Cut in the butter until the mixture resembles coarse crumbs. Slowly add in the ice water, 1 tablespoon at a time, stirring with a fork until the dough just comes together. Do not overwork the dough. Gently form the dough into a disk and wrap in plastic wrap. Refrigerate for 30 minutes.

Roll out the dough on a lightly floured surface to a 12-inch circle. Transfer to the prepared pie plate and press into the bottom and sides. Trim the edges, leaving a 1/2 inch overhang. Fold the overhang under and crimp the edges. Place in the refrigerator while you prepare the filling.

To make the filling, mix together the pumpkin, brown sugar, cinnamon, ginger, nutmeg and salt in a large bowl until combined. Add the eggs, cream and vanilla and mix until smooth. Fold in the chocolate chips. Pour the mixture into the chilled crust and spread evenly.

Bake for 45-50 minutes, or until the center is almost set. Let cool completely before serving.
