Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar

  • 1 egg
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups semi-sweet chocolate chips
  • 1/3 cup heavy cream
  • 1/4 cup granulated sugar
  • 1/4 cup cocoa powder
  • 2 tablespoons butter, melted
  • 1 teaspoon vanilla extract

Instructions

1. Preheat the oven to 350 degrees F. Grease a 9-inch round cake pan and set aside.

2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy. Beat in the vanilla and egg until well combined. In a separate bowl, whisk together the flour, baking soda, and salt. Slowly add the dry ingredients to the wet ingredients until a dough forms. Stir in the chocolate chips.

3. Transfer the dough to the prepared cake pan and press evenly into the bottom and sides of the pan. Bake for 20-25 minutes, or until golden brown and set. Allow to cool completely before filling.

4. To make the mousse, combine the cream, sugar, cocoa powder, melted butter, and vanilla extract in a medium bowl. Beat with an electric mixer until light and fluffy, about 2 minutes. Spoon the mousse over the cooled cookie crust.

5. Refrigerate for at least 2 hours before serving. To serve, cut into wedges and sprinkle with additional chocolate chips, if desired.
