Description

This Chocolate Chocolate Chip Pancake Recipe is the perfect breakfast for a special occasion or even a weekend treat. This recipe is easy to make and uses simple ingredients that you can find in your pantry. It's a great way to start your day with something sweet and delicious. The addition of chocolate chips adds a little extra something special to these pancakes. The combination of the chocolate in the batter and the chocolate chips makes for a truly indulgent breakfast. They are fluffy and moist and just the right amount of sweet. The recipe makes enough pancakes for four people, but you can easily double or triple the recipe to feed more people.

Ingredients

- 2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 eggs
- 2 cups milk
- 2 tablespoons vegetable oil
- 1 teaspoon vanilla extract
- 1/2 cup semi-sweet chocolate chips
- Optional: butter for greasing the skillet or griddle

1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda and salt.
2. In a separate bowl, whisk together the eggs, milk, vegetable oil and vanilla extract.
3. Pour the wet ingredients into the dry ingredients and whisk until just combined. Do not overmix.
4. Fold in the chocolate chips.
5. Heat a skillet or griddle over medium heat and grease with butter.
6. Pour ¼ cup of batter onto the skillet or griddle and cook until the edges are set and the bottom is lightly browned. Flip and cook the other side until browned.
7. Repeat with the remaining batter. Serve the pancakes warm with syrup and butter.

Equipment

- Large bowl
- Whisk
- Skillet or griddle
- Spatula

Notes

You can also add other mix-ins such as chopped nuts, shredded coconut, dried fruit or even peanut butter chips. You can also substitute the all-purpose flour for whole wheat flour for a healthier option. If you don't have semi-sweet chocolate chips, you can use dark or milk chocolate chips.
