Ingredients

- 2 cups rolled oats

- 1 cup shredded coconut

- ½ cup almond butter

- ¼ cup honey or maple syrup

- 2 tablespoons coconut oil

- ½ teaspoon vanilla extract

- Pinch of salt

- ½ cup dark chocolate chips

Instructions

1. Preheat the oven to 350 degrees F. Line an 8x8 inch baking dish with parchment paper and set aside.

2. In a large bowl, combine the oats, shredded coconut, almond butter, honey or maple syrup, coconut oil, vanilla extract, and salt. Mix until everything is combined and the mixture is sticky.

3. Spread the mixture into the prepared baking dish and press it down firmly.

Notes

- You can use any type of nut or seed butter in this recipe. Almond butter is my favorite, but peanut butter and sunflower seed butter both work great.

- For a lower sugar option, you can use coconut sugar in place of the honey or maple syrup.

- If you don’t have dark chocolate chips, you can use any other type of chocolate chip, chopped chocolate, or even dried fruit.
