Ingredients
For this recipe you will need: 18 ounces of caramels, 1/4 cup of heavy cream, 1/2 teaspoon of sea salt, 12 ounces of semi-sweet chocolate chips, 1/4 cup of butter, and 1/4 teaspoon of vanilla extract.
Instructions
Begin by melting the caramels, cream, and salt in a saucepan over medium heat. Stir often, until the caramels are completely melted and the mixture is smooth. Once the caramel mixture is ready, set aside and allow to cool.
Next, melt the chocolate chips, butter, and vanilla extract in a double boiler over low heat. Stir often, until the chocolate is completely melted and the mixture is smooth.
Once both mixtures are ready, spoon a tablespoon of the melted chocolate into each of the 24 silicone candy molds. Gently tap the molds against the counter to spread the chocolate evenly across the bottom.
Now, add a teaspoon of the cooled caramel mixture to each of the molds. Finally, top each with a tablespoon of the melted chocolate. Gently tap the molds against the counter once more to spread the chocolate evenly.
Place the molds in the refrigerator and allow to cool for at least 2 hours. Once the caramels are set, turn the molds over onto a parchment-lined baking sheet and gently tap to remove the caramels. Sprinkle each caramel with a pinch of sea salt and enjoy!
Equipment
For this recipe you will need a medium sized saucepan, a double boiler, 24 silicone candy molds, and a parchment-lined baking sheet.
Notes
If you don’t have silicone candy molds, you can also use a mini muffin tin lined with paper liners. Simply spoon the melted chocolate into the bottom of the liners, top with the caramel mixture, and then add the remaining chocolate. You may also use regular sea salt for this recipe if desired.
