The chocolate covered rice krispie balls combine the classic flavor of rice krispies with the smooth, decadent taste of melted chocolate. Ingredients

3 cups of rice krispies cereal

1/2 cup of butter

1/2 cup of peanut butter

1/2 cup of honey

1 teaspoon of vanilla extract

1/4 cup of mini chocolate chips

2 cups of semi-sweet chocolate chips

2 tablespoons of coconut oil

Instructions

Begin by melting the butter in a saucepan over medium heat. Once melted, add the peanut butter, honey and vanilla extract. Stir until all ingredients are combined. Next, add the rice krispies cereal, mini chocolate chips and stir until everything is evenly combined. Remove from heat and let the mixture cool for 10 minutes. Once cooled, use a cookie scoop or spoon to form the mixture into balls and place them on a parchment lined baking sheet. Place the baking sheet in the freezer for 30 minutes.

In a separate bowl, add the semi-sweet chocolate chips and coconut oil. Microwave for 30 seconds, stir and microwave again for 30 seconds. Stir until smooth and creamy. Dip the chilled rice krispie balls in the melted chocolate, making sure to coat them completely. Place them back on the parchment lined baking sheet and freeze for 1 hour. Once the chocolate has hardened, store the chocolate covered rice krispie balls in an airtight container in the refrigerator for up to 1 week.

Notes
