Ingredients

  • 1 cup graham cracker crumbs
  • 3 tablespoons melted butter

  • 1/2 cup heavy cream

Instructions

Preheat oven to 350 degrees F. Grease a 9-inch springform pan and set aside.

In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom and up the sides of the prepared pan. Bake for 10 minutes.

In a large bowl, beat together the cream cheese and sugar until light and fluffy. Add the eggs, one at a time, beating until just combined. Stir in the cocoa powder and chocolate chips.

Pour the batter into the prepared crust and bake for 40-45 minutes or until the center is just set. Allow to cool completely before chilling in the refrigerator for at least 4 hours.

To make the ganache, heat the cream in a small saucepan over medium heat until it just begins to simmer. Place the chocolate chips in a heatproof bowl and pour the hot cream over them.
