Instructions

Heat a non-stick skillet over medium heat and lightly grease with vegetable oil. Pour 1/4 cup of the crepe mixture into the skillet and swirl it around so it forms a thin layer. Cook for 1-2 minutes until the edges begin to turn golden brown. Flip the crepe and cook for an additional 1-2 minutes until lightly browned. Transfer the crepe to a plate and repeat with the remaining crepe batter.



To make the filling: In a medium bowl, whisk together the cream, sugar, vanilla extract, and cocoa powder until combined.



To assemble the cake: Place a crepe on a plate or cake stand. Spread 1/4 of the chocolate filling over the crepe. Top with another crepe and spread 1/4 of the filling over the top. Repeat with the remaining crepes and chocolate filling.



To make the topping: Place the chopped chocolate and cream in a microwave-safe bowl and microwave in 30-second intervals until the chocolate is melted. Spread the melted chocolate over the top of the cake.



Allow the cake to chill in the refrigerator for 1-2 hours before serving.
