Ingredients:

-2 cups all-purpose flour

-2 teaspoons baking powder

-1/2 teaspoon baking soda

-1/2 teaspoon salt

-3/4 cup granulated sugar

-1/2 cup (1 stick) unsalted butter, melted and cooled

-2 large eggs, lightly beaten

-1 cup buttermilk

-1 teaspoon vanilla extract

-1 1/2 cups semi-sweet chocolate chips

Instructions:

1. Preheat the oven to 375°F and line a 12-cup muffin tin with paper liners.

2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

3. In a large bowl, whisk together the sugar and melted butter until combined. Add the eggs, buttermilk, and vanilla extract and whisk until smooth.

4. Add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.

5. Fold in the chocolate chips.

6. Divide the batter evenly among the muffin cups, filling each cup about 3/4 full. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Allow the muffins to cool in the tin for 10 minutes before transferring to a wire rack to cool completely.

Notes:

-If you don’t have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or white vinegar to 1 cup of milk and allowing it to sit for 10 minutes before using.
