• 1/2 cup butter, softened
• 1 cup sugar
• 2 large eggs
• 1 teaspoon vanilla extract
• 1 cup milk
• 1/2 cup cocoa powder
For the Coffee Mousse:
• 1/2 cup strong brewed coffee
• 2 tablespoons sugar
• 2 tablespoons cocoa powder
• 1 teaspoon instant coffee granules
• 1 1/2 cups heavy cream
• 2 tablespoons powdered sugar
• 1 teaspoon vanilla extract
For the Chocolate Ganache Topping:
• 1/2 cup heavy cream
• 1/2 cup semi-sweet chocolate chips
Instructions
Make the Chocolate Cake:
Preheat the oven to 350 degrees F. Grease and flour a 9-inch round cake pan. In a medium bowl, whisk together the flour, baking powder, and salt. In a large bowl, beat the butter and sugar until light and fluffy. Add the eggs and vanilla and beat until combined. Slowly add the dry ingredients and beat until just combined. Add the milk and cocoa powder and beat until smooth. Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely.
Make the Coffee Mousse:
In a small saucepan, combine the coffee, sugar, cocoa powder, and instant coffee granules. Bring to a simmer and cook for 1 minute, stirring constantly. Remove from heat and let cool completely. In a medium bowl, beat the heavy cream, powdered sugar, and vanilla until soft peaks form. Slowly add in the cooled coffee mixture and beat until stiff peaks form.
Assemble the Cake:
Remove the cooled cake from the pan and place it on a cake stand or serving platter. Spread the coffee mousse over the cake, making sure to cover the entire surface. Place the cake in the refrigerator to chill for at least 1 hour.
Make the Chocolate Ganache Topping:
In a small saucepan, heat the heavy cream until it just starts to simmer. Remove from heat and stir in the chocolate chips until melted and smooth. Let cool for 5 minutes, then pour the ganache over the chilled cake. Let the cake chill in the refrigerator for another 1 hour before serving.
