Ingredients
For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/3 cup melted butter
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
For the Cheesecake Layer:
- 2 8-ounce packages cream cheese, at room temperature
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup sour cream
For the Cookie Dough Layer:
- 1/2 cup butter, at room temperature
- 3/4 cup light brown sugar
- 1/4 cup granulated sugar
- 2 tablespoons milk
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup mini semi-sweet chocolate chips
For the Chocolate Ganache:
- 1/2 cup heavy cream
- 1 cup semi-sweet chocolate chips
For Topping:
- 1/2 cup chopped chocolate chip cookies
Instructions
1. Preheat the oven to 350 degrees F and grease a 9-inch springform pan.
2. In a medium bowl combine the graham cracker crumbs, melted butter, sugar, and salt. Mix until combined and press into the bottom of the prepared pan. Bake for 10 minutes and let cool.
3. In the bowl of a stand mixer, beat together the cream cheese and sugar until light and fluffy. Add in the eggs, one at a time and mix until combined. Add in the vanilla extract and sour cream and mix until combined. Pour the cheesecake batter over the cooled crust.
4. In a medium bowl, cream together the butter and sugars until light and fluffy. Add in the milk and vanilla extract and mix until combined. Add in the flour, baking powder, and salt and mix until combined. Fold in the mini chocolate chips. Drop spoonfuls of the cookie dough over the top of the cheesecake.
5. Bake for 40 minutes, or until the center of the cheesecake is slightly jiggly. Let cool completely.
6. In a small saucepan, heat the heavy cream over low heat until steaming. Remove from the heat and add in the semi-sweet chocolate chips. Let sit for 5 minutes and then whisk until smooth. Pour over the cooled cheesecake and spread evenly.
7. Refrigerate for at least 4 hours, or overnight.
8. Before serving, sprinkle the chopped chocolate chip cookies over the top of the cheesecake. Slice and serve.
