Ingredients

2 pints of fresh strawberries, rinsed and dried
2 cups of semi-sweet chocolate chips
2 tablespoons of coconut oil
1/4 cup of white chocolate chips
Optional: Sprinkles, nuts, and/or coconut flakes for topping

Equipment

Double boiler
Cookie sheet
Wax paper
Pastry brush
Spatula

Instructions

Step 1: Fill the bottom of the double boiler with 1-2 inches of water and place it on the stove over medium heat. Place the chocolate chips and coconut oil in the top of the double boiler. Stir the ingredients together until melted and well-combined. If needed, reduce the heat to low.

Step 2: Line a cookie sheet with wax paper and set aside. Dip the strawberries one at a time into the melted chocolate mixture and place them on the wax paper. Once all of the strawberries have been dipped, place the cookie sheet in the refrigerator for 10 minutes to set the chocolate.

Step 3: Place the white chocolate chips in the top of the double boiler with the remaining chocolate mixture. Stir until the chocolate is melted and combined. Use a pastry brush to drizzle the melted white chocolate over the strawberries. Add any desired toppings, such as sprinkles, nuts, or coconut flakes.

Step 4: Place the cookie sheet in the refrigerator for 10 minutes to set the white chocolate. Once set, the Chocolate Covered Strawberries are ready to serve.

Notes

Be sure to use fresh, ripe strawberries for the best flavor. If the strawberries are too wet, the chocolate may not stick. If the strawberries are too dry, the chocolate will crack. For best results, use strawberries that are just slightly soft to the touch.

If desired, you can also dip the strawberries in white chocolate or dark chocolate. To get a nice, even coating, be sure to tilt the pan as you dip the strawberries.

For a festive touch, you can add a few drops of food coloring to the melted white chocolate. This will give the chocolate a nice pop of color that will really stand out.
