Ingredients
• 2 cups (256g) almond flour
• 1/2 cup (64g) coconut flour
• 1/2 teaspoon baking soda
• 1/4 teaspoon salt
• 1/2 cup (113g) melted butter
• 1/2 cup (120ml) sugar-free maple syrup
• 1 teaspoon vanilla extract
• 1/2 cup (88g) sugar-free chocolate chips
Instructions
1. Preheat oven to 350°F (177°C). Line a baking sheet with parchment paper or a silicone baking mat.
2. In a medium bowl, whisk together almond flour, coconut flour, baking soda, and salt. Set aside.
3. In a large bowl, mix together melted butter, maple syrup, and vanilla extract until combined.
4. Add in the dry ingredients to the wet ingredients and mix until combined. Fold in the chocolate chips.
5. Using a cookie scoop or spoon, scoop dough onto the prepared baking sheet. Gently press the cookies down with your fingers or the back of a spoon.
6. Bake for 12-15 minutes until golden brown. Let cool for 5 minutes before transferring to a wire rack.
