Ingredients
For the cookies:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1/2 cup mini marshmallows
For the chocolate coating:
- 12 ounces semi-sweet chocolate chips
- 2 tablespoons vegetable oil
- 2 tablespoons cocoa powder (optional)
Instructions
1. Preheat the oven to 350°F. Grease a baking sheet or line it with parchment paper.
2. In a medium bowl, sift together the flour, baking powder, and salt. Set aside.
3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time, followed by the vanilla extract.
4. Gradually add the dry ingredients to the wet ingredients. Mix until just combined.
5. Scoop the dough onto the prepared baking sheet, leaving at least 2 inches of space between each cookie. Flatten the dough slightly and bake for 10-12 minutes until golden brown. Remove from the oven and allow to cool completely on the baking sheet.
6. Place the marshmallows on top of each cookie. Return the cookies to the oven for 1-2 minutes, or until the marshmallows begin to puff up. Remove from the oven and allow to cool completely.
7. In a double boiler, melt the chocolate chips and oil together. Dip each cookie into the melted chocolate and place on a parchment paper-lined baking sheet. Sprinkle with cocoa powder, if desired. Allow the chocolate to set before serving.

Notes
- Be sure to use mini marshmallows, as the larger ones will not melt as evenly.
