Ingredients

For the Turkish delight:

- 4 cups sugar

- 4 tablespoons cornstarch

- 2 tablespoons rose water

- 2 tablespoons lemon juice

- 2 tablespoons butter

- 2 tablespoons powdered sugar

- 1 teaspoon vanilla extract

- 1 teaspoon cream of tartar

- 1/2 cup chopped pistachios

For the chocolate coating:

- 2 cups semi-sweet chocolate chips

- 2 tablespoons vegetable oil

Instructions

1. Begin by preparing the Turkish delight: In a medium saucepan, combine the sugar, cornstarch, rose water, lemon juice, butter and cream of tartar. Stir together until everything is well combined, then bring the mixture to a boil over medium-high heat. Reduce the heat and simmer for 8-10 minutes, stirring occasionally to prevent burning.

2. Once the mixture is thick and gooey, remove it from the heat and stir in the powdered sugar, vanilla extract, and chopped pistachios. Pour the mixture into a greased 8x8 inch baking dish and spread it out evenly. Allow the mixture to cool and set, about 2 hours.

3. Once the Turkish delight has set, prepare the chocolate coating: In a medium heat-safe bowl, combine the chocolate chips and vegetable oil. Place the bowl over a pot of simmering water, making sure the bottom of the bowl does not touch the water. Stir the chocolate chips until they are melted and smooth.

4. Cut the Turkish delight into small cubes and dip each one in the melted chocolate. Place the chocolate-covered cubes on a parchment-lined baking sheet and allow them to cool and set, about 1 hour.

5. Serve the chocolate-covered Turkish delight and enjoy!

Notes

- If you prefer, you can substitute almond extract for the vanilla extract in the Turkish delight recipe.
