Ingredients

For the truffles:

  • 1 cup Medjool dates, pitted and soaked in hot water for 10 minutes
  • 2 tablespoons cocoa powder
  • 1 tablespoon coconut oil

  • 1/4 teaspoon sea salt

For coating:
  • 1/4 cup cocoa powder
  • 1/4 cup flaked coconut

Instructions

1. Drain the dates and place them in a food processor. Pulse until the dates are broken down and a paste forms.


2. Add the cocoa powder, coconut oil, vanilla extract, almond butter, and salt to the food processor. Pulse until everything is combined and the mixture is smooth.


3. Scoop the mixture into tablespoon-sized balls and place them on a parchment-lined baking sheet.


4. Place the cocoa powder and flaked coconut in separate shallow bowls. Roll each truffle in the cocoa powder until it is evenly coated. Then roll it in the flaked coconut.


5. Place the truffles in the refrigerator to chill until they are firm, about 1 hour.


6. Serve chilled or at room temperature. Enjoy!

Notes
