Instructions

Begin by melting the chocolate chips and coconut oil in a double boiler. If you don’t have a double boiler, you can create one by filling a saucepan about halfway with water and placing a heat-safe bowl on top. Make sure the bowl does not touch the water. Then, turn the heat to medium-high and stir the chocolate chips and coconut oil together until completely melted. Once melted, remove from heat and set aside.

Next, line a baking sheet with parchment paper or a silicone mat. Place the dried apricots onto the baking sheet and set aside. Then, dip each apricot halfway into the melted chocolate. Allow the excess chocolate to drip off before placing the apricot onto the baking sheet. Repeat this process until all of the apricots are dipped. If desired, sprinkle with nuts, sprinkles, or other toppings.

Once all of the apricots are dipped and topped, place the baking sheet into the refrigerator to let the chocolate harden. This should take about 15 minutes. Once hardened, melt the white chocolate chips in the same way as the semi-sweet chocolate chips and drizzle over the chocolate dipped apricots. Place back in the refrigerator for about 10 minutes to let the white chocolate harden.
