Ingredients

For the cake:

  • 2 cups all-purpose flour

  • 1 1/2 cups white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk
For the chocolate mousse:
  • 1/2 cup butter, softened
  • 2/3 cup cocoa powder
  • 1/4 cup milk
  • 1/2 cup white sugar
  • 2 tablespoons cornstarch
  • 3 eggs
  • 1/2 teaspoon vanilla extract
  • 1/2 cup semi-sweet chocolate chips
For the topping:
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup butter
  • 2 tablespoons white sugar
  • 1 teaspoon vanilla extract

Instructions

1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
2. In a medium bowl, sift together the flour, baking powder, baking soda and salt. Set aside.
3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour mixture alternately with the milk; stir just until blended. Spread into the prepared pan.
4. Bake for 30 to 35 minutes in the preheated oven. Cake is done when it springs back to the touch. Cool in the pan for 10 minutes, then turn out onto a wire rack and cool completely.
5. To make the mousse, cream together the butter and cocoa powder in a medium bowl. Beat in the milk, sugar, cornstarch, eggs, and vanilla. Stir in the chocolate chips.
6. Cut the cooled cake into two layers horizontally. Place one layer on the bottom of a 9x13 inch dish. Spread the mousse over the cake layer. Place the remaining cake layer on top.
7. To make the topping, melt the chocolate chips and butter in a medium saucepan over low heat. Stir in the sugar and vanilla. Spread over the top of the cake. Refrigerate for at least one hour before serving.
