Ingredients

For the cheesecake:

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 2 packages cream cheese
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 3 large eggs

For the chocolate coating:

  • 1 cup semi-sweet chocolate chips
  • 3 tablespoons butter
  • 1 teaspoon vanilla extract

Instructions

Preheat the oven to 350°F. Grease a 9-inch springform pan with butter and set aside.

In a bowl, mix together the graham cracker crumbs and melted butter. Spread the mixture evenly into the bottom of the prepared pan and press down firmly. Bake for 10 minutes and then set aside to cool.

In a large bowl, beat together the cream cheese, sugar, cornstarch, and vanilla extract until light and fluffy. Add in the eggs, one at a time, and beat until fully incorporated. Pour the mixture into the prepared pan and spread it evenly.

Bake for 35 to 40 minutes, or until the center is set. Remove the pan from the oven and allow it to cool completely before adding the chocolate coating.

To make the chocolate coating, melt the chocolate chips and butter in a double boiler or in the microwave. Once melted, stir in the vanilla extract. Pour the mixture over the cooled cheesecake and spread it evenly. Place the cheesecake in the refrigerator for at least 1 hour before serving.
