Ingredients

  • 2 cups almond flour
  • 1/4 cup coconut oil
  • 3/4 cup coconut sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup almond milk
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat the oven to 350°F. Grease a 12-cup muffin tin with coconut oil.
  2. In a medium bowl, mix together the almond flour, coconut oil, coconut sugar, baking powder, cinnamon, and salt until fully combined.
  3. Add in the almond milk and vanilla extract and mix until fully combined.
  4. Fold in the dark chocolate chips.
  5. Spoon the batter into the muffin cups and fill each cup about 3/4 full.
  6. Bake for 18-20 minutes, or until a toothpick inserted in the middle of a muffin comes out clean.

Notes

Feel free to add other mix-ins such as chopped nuts, seeds, dried fruit, or anything else you would like.
