- 1 teaspoon salt
- 1 ½ cups granulated sugar
- 3 large eggs
- ¾ cup vegetable oil
- 1 teaspoon vanilla extract
- 1 cup buttermilk
For the chocolate mousse:
- 2 ½ cups heavy cream
- 1 cup semi-sweet chocolate chips
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chunks
For the ganache:
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
- 1 tablespoon unsalted butter
For the topping:
- 1/4 cup chocolate chunks
Instructions
1. Preheat oven to 350°F. Grease two 9-inch round cake pans and line with parchment paper. Set aside.
2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
3. In the bowl of a stand mixer, beat the sugar, eggs, oil, and vanilla extract until light and fluffy, about 3 minutes.
4. With the mixer on low, add the dry ingredients in three batches, alternating with the buttermilk. Mix until just combined.
5. Divide the batter evenly between the prepared pans and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
6. Let the cakes cool in the pans for 10 minutes before transferring to a cooling rack to cool completely.
7. To make the mousse, add the heavy cream to the bowl of the stand mixer and beat until stiff peaks form.
8. In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring after each interval until completely melted.
9. Add the melted chocolate, vanilla extract, and chocolate chunks to the whipped cream and fold together until combined.
10. To assemble the cake, place one of the cooled cakes on a cake stand or plate. Spread half of the mousse over the top of the cake. Top with the second cake and spread the remaining mousse over the top.
11. To make the ganache, add the chocolate chips, heavy cream, and butter to a microwave-safe bowl and microwave in 30-second intervals, stirring after each interval until the ganache is smooth.
12. Pour the ganache over the cake and spread evenly. Sprinkle the top with the remaining chocolate chunks.
13. Refrigerate for at least 2 hours before serving. Enjoy!
