Ingredients

For the donut batter: 2 cups all-purpose flour 1/2 cup cocoa powder 1 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1/2 cup granulated sugar 2 large eggs 1/2 cup vegetable oil 1 teaspoon vanilla extract 1/2 cup buttermilk 1/3 cup shredded coconut For the Chocolate Coconut Glaze: 1/2 cup semi-sweet chocolate chips 2 tablespoons coconut oil 2 tablespoons heavy cream 1/4 teaspoon coconut extract For the Chocolate Coconut Topping: 1/2 cup shredded coconut 2 tablespoons semi-sweet chocolate chips

Instructions

Preheat oven to 350 degrees F. Grease a donut pan with non-stick cooking spray. In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. In a large bowl, whisk together the sugar, eggs, oil, vanilla extract, and buttermilk until combined. Add the dry ingredients to the wet ingredients and whisk until just combined. Do not overmix. Fold in the shredded coconut. Spoon the batter into the prepared donut pan, filling each cavity about two-thirds full. Bake for 10-12 minutes, or until a toothpick inserted into the center of a donut comes out clean. Let cool for 5 minutes in the pan, then remove and let cool completely on a wire rack. To make the glaze, add the chocolate chips and coconut oil to a small heat-safe bowl. Set the bowl in a skillet of simmering water and let the chips and oil melt, stirring occasionally. Once melted, stir in the cream and coconut extract. Dip each cooled donut into the glaze, then place on a wire rack to let the glaze set. Sprinkle the shredded coconut and chocolate chips over the top of each donut. Let the donuts cool until the glaze is set. Enjoy!
