Ingredients

  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract

For garnish:

  • Mini chocolate chips

Instructions

To make the cake layer, preheat the oven to 350°F. Grease a 9x13-inch baking pan and line the bottom with parchment paper. Set aside.

In a large bowl, sift together the flour, baking powder, salt and cocoa powder. Using a stand mixer, beat the butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Add the vanilla extract and mix until combined. Alternately add the flour mixture and the milk, beginning and ending with the flour mixture. Mix until just combined.

Pour the batter into the prepared pan and spread evenly. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Let the cake cool completely.

Meanwhile, make the cookie layer. In a medium bowl, prepare the cookie mix according to the package instructions. Spread the cookie dough over the cooled cake layer. Bake for 20-25 minutes or until the top is golden brown. Let the cookie layer cool completely.

To make the ganache, place the chocolate chips in a medium heatproof bowl. In a small saucepan, heat the heavy cream until it just begins to simmer. Pour the cream over the chocolate chips and let sit for 5 minutes. Add the vanilla extract and stir until the mixture is smooth and glossy. Let the ganache cool slightly before pouring over the cookie layer.

Spread the ganache evenly over the cookie layer. Sprinkle with mini chocolate chips. Refrigerate for at least 1 hour before serving.
