Ingredients

You’ll need maraschino cherries, semi-sweet chocolate chips, white chocolate chips, red food coloring, black licorice strings, and mini marshmallows.

Equipment

You’ll also need a double boiler, parchment paper, and a candy thermometer. You’ll also need a small bowl and a spoon for stirring the melted chocolate.

Instructions

Start by draining the maraschino cherries and patting them with a paper towel to dry them. Then, set up a double boiler over low heat and add the semi-sweet chocolate chips. Melt the chocolate, stirring constantly with a spoon, until it reaches a temperature of 120 degrees F. Once the chocolate is melted, turn off the heat and set aside.

Next, line a baking sheet with parchment paper and place the cherries on the paper. Pour the melted chocolate over the cherries and spread evenly with a spoon. Place the baking sheet in the refrigerator and allow the chocolate to harden for 15 minutes.

Meanwhile, melt the white chocolate chips in the double boiler, stirring constantly. Once the chips are melted, add a few drops of red food coloring and mix until combined. Remove from heat and set aside.

Once the cherries are finished chilling, remove them from the refrigerator and let them come to room temperature. Dip one end of each cherry into the red chocolate and place them back on the parchment paper. Cut the licorice strings into small pieces and use them to make the mice’s tails. Place the tails on top of the red chocolate and press down gently to adhere. Place two mini marshmallows on each cherry to make the ears and eyes and press down gently.

Place the baking sheet back in the refrigerator and allow the chocolate and licorice to harden for 15 minutes. Once the chocolate is set, your chocolate covered cherry mice are ready to enjoy!

Notes

You can also use almond bark or candy melts instead of white chocolate chips for the red chocolate. Feel free to get creative with the decorations and have fun with it!
