Ingredients

For the cake:
3 large eggs

1/2 cup raspberry jam
1/4 cup heavy cream

For the chocolate topping:
4 ounces semisweet chocolate, chopped
1/4 cup heavy cream
1 tablespoon butter

Instructions

1. Preheat oven to 350 degrees F. Grease and flour a 10x15 inch jelly roll pan.

2. In a large bowl, beat eggs and sugar together until thick and pale in color. Add flour, baking powder, salt and vanilla extract. Beat until combined.

3. Spread batter evenly into prepared pan. Bake for 12-15 minutes or until a toothpick inserted in the center comes out clean.

4. Place a clean kitchen towel on the counter. Sprinkle with powdered sugar. Invert the cake onto the towel and carefully remove the pan. Allow cake to cool completely.

5. Spread raspberry jam over the entire cake. In a medium bowl, beat heavy cream until stiff peaks form. Spread whipped cream over the jam. Roll cake up, starting from one of the long sides. Wrap in plastic wrap and place in the refrigerator until chilled, about 1 hour.

6. In a double boiler, heat the chopped chocolate, cream and butter until melted and smooth. Stir frequently.

7. Unwrap the cake and place onto a wire rack over a baking sheet. Pour the chocolate over the cake, making sure to cover the entire cake. Allow to set before serving. Enjoy!
