Ingredients
1 cup (220 g) granulated sugar
2 tablespoons (30 ml) vegetable oil
2 large eggs
1 teaspoon (5 ml) pure vanilla extract
1/2 cup (50 g) cocoa powder
1 teaspoon (5 g) baking powder
1/4 teaspoon (1.25 g) salt
2 cups (240 g) all-purpose flour
1/2 cup (60 g) powdered sugar for rolling the dough
Instructions
1. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
2. In a medium bowl, whisk together the sugar, oil, eggs, and vanilla until combined.
3. In a separate bowl, whisk together the cocoa powder, baking powder, salt, and flour.
4. Add the dry ingredients to the wet ingredients and mix with a wooden spoon until a dough forms.
5. Scoop the dough out into 1-2 tablespoon sized balls and roll in powdered sugar. Place on the prepared baking sheets.
6. Bake for 8-10 minutes, until the cookies just start to crack. Allow to cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
