Ingredients

  • 3 cups almond flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened

  • 2 eggs
  • 1 teaspoon almond extract
  • 1/2 cup sliced almonds
  • 1 cup semi-sweet chocolate chips

Instructions

1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

2. In a large bowl, whisk together the almond flour, baking powder and salt. Set aside.

3. In a separate bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time, followed by the almond extract.

4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the sliced almonds.

5. Divide the dough in half and shape each half into a log about 12 inches (30 cm) long. Place the logs onto the prepared baking sheet, leaving about 2 inches (5 cm) between them. Bake for 25-30 minutes, until lightly golden brown.

6. Remove from the oven and let cool for 10 minutes. Reduce the oven temperature to 325°F (165°C). Cut the logs into 1/2-inch (1.25 cm) slices and place them cut side down on the baking sheet. Bake for an additional 15 minutes, until lightly golden brown.

7. Remove the biscotti from the oven and let cool on a wire rack. Once cool, melt the chocolate chips in a microwave-safe bowl or a double boiler. Dip half of each biscotti into the melted chocolate and let cool on parchment paper until the chocolate has hardened.
