Ingredients

For the shortbread:

  • 1 cup (250g) butter, softened
  • 1/2 cup (100g) caster sugar
  • 2 cups (300g) plain flour

For the chocolate dip:
  • 100g dark chocolate
  • 50g milk chocolate
  • 50g white chocolate

For the decorations (optional):
  • Sprinkles
  • Chopped nuts
  • Dried fruit

Instructions

1. Preheat the oven to 160°C/320°F (fan-assisted). Line two baking trays with baking paper and set aside.

2. Cream together the butter and sugar until light and fluffy. Add the flour and mix until the ingredients are combined and the dough is formed.

3. Roll the dough out onto a lightly floured surface and use cookie cutters to cut out desired shapes. Place the cookies onto the prepared baking trays.

4. Bake for 10-15 minutes until golden brown. Leave the cookies to cool completely before dipping in chocolate.

5. Break the chocolate into small pieces and place into separate bowls. Melt the chocolate over a saucepan of simmering water, stirring occasionally until melted. Alternatively, melt the chocolate in the microwave in 30-second intervals, stirring after each interval until melted.

6. Dip the cooled cookies into the melted chocolate, using a spoon or fork to help coat the cookie. Place onto a wire rack set over a baking tray and allow the chocolate to set.

7. Decorate with your desired toppings, such as sprinkles, chopped nuts and dried fruit.

Notes
